I made plantain-apple pancakes this weekend (1 plantain, 1 grated sour apple, 2 eggs, cinnamon, vanilla and ~ 1/2 tsp of the xanthan gum), and they turned out great. I had to flip them a few times though, there and back to make sure they held together. I used a bit of butter to fry them on the hot electric flat top. They were very pleasant to taste.
I want to try making pumpkin muffins this way next time. I still have a leftover pumpkin in the garage.
