We use a lot of bacon grease (drippings), home rendered lard (this is WAY easier than it sounds!) and coconut oil. Here is the coconut oil I prefer:

Unrefined coconut oil. Found at most stores either by the cooking oils or in the asian/specialty food isle. I personally like tropical traditions and buy it by the gallon.
You can also use butter or ghee.
