I ain't having no ostrich in my apartment, dayum they scary.

I'd be inclined to either boil it and serve a slice as a base to a salad, or make a good frittata.
I heard they're really hard to open.
Welllll, I know of some grain free cake recipes that call for 10 - 12 eggs. Isn't one ostrich egg equal to that?
