I was thinking of making zucchini strip noodles and then mixing canned salmon and pesto, warming that up and serving over the noodles. I eat canned salmon often right out of the can, but have been thinking of recipes I could do as quick dinner ideas when I don't feel like cooking anything too difficult.

I second (or third?) the patties suggestion. I squish meat, bones and most of the skin very well. Add egg(s), garlic powder, onion powder, salt, chili powder and/or paprika. Form patties and saute in olive oil till golden (approx. 3 min. on each side). I call this my healthy, inexpensive, quick and easy meal. Tastes awesome, too.

I love Salmon patties. I use 1 egg for 2 cans of salmon, add garlic and dill. I froze the extras for quick dinners. Yum!!

Had some today actually, Pacific wild caught. I can't remember if it is the Atlantic one that is not so great due to pollutants?? I like the stuff, it has some of those edible bony bits like sardines do, so some calcium there too. I reckon it would go well in some spicy thai style soup, will try that. And it is cheap, 1.60 GBP over here for 400 grm can. Tuna is fab too but I like some variety, and only buy fresh salmon when it's on a special.

I'm so glad I asked here. So many great ideas! Salmon cakes seem really easy to make, too. And I'm all for cooking anything in loads of butter. =D

It's the Atlantic salmon - that is always farmed. I make salmon patties as well.

I eat it over the Trader Joe's 'Healthy 8 Chopped Veggie' mix - juice 'n all. It makes an awesome fast lunch.

I'm starting to get sick of this stuff as im eating it everyday for lunch (money is tight) think im gonna try adding some mustard, boiled egg, and maybe some pickle relish to give it some more flavor. I'd honestly just rather have bacon and boiled eggs but I need more protein than that. I'm trying to cut down on bacon bc I cant afford nitrate free so I don't want it to be a staple as I had made it for so long
