Nice and quick breakfast...can heat a sweet potato (I use 1/2 of a small one) in the microwave while you cook your veggie/egg/scramble if you want the added carbs. I use butter instead of pam and like to toss in some dice fresh jalapeno into the eggs and serve topped with salsa and a side avocado/tomato salad. Quick and delicious.
Since I tend to use onions/mushrooms/peppers/squash/cucumbers/zucchini etc... for all of my meals, I keep enough prepared in tupperware to get me through a few days so I really only have to prep veggies once to twice a week.

I love smoothies, especially in summer. I found some berries and avocado on special (we're coming out of winter here) so I've the past couple of days I've made smoothies out of milk, avocado, strawberry, a little banana and grated some raw cacao butter into it. Otherwise instead of the avocado and cacao butter I use yoghurt and cinnamon and a dash of vanilla essence. Super yummy and pretty filling.
I also eat leftover veggies from the night before with an omelette or sometimes fruit, yoghurt and nuts are all I'm craving.

Well i have been having this for breakfast,
A slices, of bread with butter pasted on it instead of honey, and a glass of skimmed milk.
I eat fresh yoghurt, 2 eggs and glass of fresh juice.
What do you think about the above for breakfast? Any other breakfast ideas?
I find that my stomach, does not digest cereal very well it feels crunchy in my stomach.
Also oatmeal tend to not make me full.

I made a hash last weekend with all the leftovers in my refrigerator: ham, onion, brussel sprouts, mushrooms, red cabbage and carrots, all cooked until caramelized, then topped with some eggs fried in butter. Amazing, and very filling. The beauty of hash is that you can change up the ingredients a hundred different ways.
I also like to make large pots of stew or casseroles to last for several days - chili made with beef, onions, peppers, diced tomatoes, zucchini and spices to taste is another great way to start the day.

I love having scrambled eggs for breakfast. To keep it interesting, I change up the other ingredients I add to the eggs. Some days it's taco meat, other days it's steak or pulled pork, etc. Today I had crabmeat in my eggs, with fresh avocado on top. Delicious.

I rarely make a typical "breakfast". I usually just eat what's left over from the day before, more often than not cold. There are moments I would make eggs, scrambled with meat and veggies, but I usually don't cook until the afternoon.
But...
6 eggs
1 or 2 tomatoes
Any number of chili peppers
Shallot
Garlic
Mushrooms
Uncured sausage
Whatever veggies I might have on hand
Whatever else might be left over from a previous meal

When I was growing up, if I had cereal of any kind or toast for brekkie before school (that meant eating around 7am), I'd be starved by 9 and couldn't function well from then until lunch time. If I had cottage cheese or hard boiled eggs, I was golden. If you're good with dairy, cottage cheese is certainly an easy brekkie to put together and eat.
I also second the crustless quiche or eggy muffin idea that you can make in a muffin tin and reheat as you're ready to eat them. I used to make one with cottage cheese and spinach that was good and easy and had a lot of room for variations. I haven't tried making these since I cut out dairy, but I'm sure there are plenty of recipes on this forum and across the net if you're interested. Or if you like the idea of the spinach-cottage cheese-eggies, just ask and I'll post the recipe.
My fave for brekkie though, is leftovers. But maybe that's because I'm usually up for a few hours before I'm ready to think about eating.

Oatmeal!!! It keeps me quite full for awhile! :) I LOVE Peanut Butter Chocolate oatmeal especially! With half a banana on top. Yum!
I also make omelets. Omelets with cheese and if I have any, leftover veggies from the night before. Peppers, asparagus, whatever it is, I put it in there if it tastes good. Piece of toast. My coffee. I'm good for awhile. :)
I have greek yogurt as a mid morning snack.

I found this recipe recently and I'm dying to try it!!! This would make an awesome breakfast, pulled straight from the fridge, it's very pretty and elegant looking too.
I imagine you could just use your own beef stock as long as it's been prepped with gelatin per the recipe.
This one's got serious potential IMHO... Besides being different and novel.
