I don't like using the oven in the summer so I put mine in the crockpot on low and let them cook overnight or while I'm at work, and then put whatever topping I'm in the mood for.

Do you use a rack of any kind, or just put them on the pot? Add any water/broth?
I just clean them and throw them in plain. No rack, or water. They come out perfect every time.

I peel and cut them into wedge shapes and put them in the microwave for 5 minutes. They taste a lot better than when they're boiled.
I just had the best sweet potato I've ever tasted at a restaurant called [URL="http://www.yelp.com/biz/strip-ts-watertown"]Strip-T's [/URL]in Watertown MA. It was a Japanese sweet potato (the inside is ivory colored, not orange) and they were cut into large slices, salted and then pan fried, salted and served with a house-made miso-garlic mayonnaise.
Do the different types of sweet potatoes have any differences in things like fructose, raffinose etc? I don't do too well with golden sweet potatoes, was wondering if the others had less sugar and whatnot.

Probably in a mix of coconut oil and butter ~ tomorrow! :D

Yep, they are chips. I think you can do it in the oven, but it may take forever. I find it is the easiest with electric mandoline and dehydrator. One of the best things we got since going paleo/primal. :)
