I cooked a poultry CSA chicken in the crock pot today. We shredded it up and made layered taco "yum bowls" as I like to call them. Lettuce, chicken, salsa, cheese, and a healthy scoop of guacamole. :)

I had a taco salad tonight too! Just grassfed local beef cooked up with taco seasoning, with all the taco innards in a bowl!
My brother, a friend and I occasionally go crazy making manly food. Yesterday was such an occasion.
It's a meatloaf with a filling of red pepper, olives, bacon (fried up before being added) and cheese (cheddar and feta). The outside is also coated in bacon, and then grilled! It was amazing and quite lowcarb :)
Had a salad and homemade pesto on the side.

Yep, my brother made the sauce. I don't know with what exactly, but it did contain honey.

You could probably play around with all kinds of different fillings for that. I get a lot of ground meat from my grassfed meat CSA and I'm always looking for new ideas to use some of it.

My dinner was quite simple in comparison. 8 eggs, 1 red pepper, 5 cloves garlic, 2 jalapeno peppers, onion, a few oz of aged cheddar all done in 2tbls coconut oil and 2tbls butter. What made it great is that the eggs, butter, and cheese where all farm fresh and all the veggies were picked from my garden just prior to cooking. Ate the whole thing.
Fresh Roma beans sautéd in bacon grease, served with butter.
Bone broth soup to chase it.
Today is CSA box day, so we also will be having way too much fruit, and will have to figure out what to do with various things... like fennel. Seriously, fennel?
Chicken tikka masala on top of locally-grown broccoli, plus a few handfuls of coconut chips and a big mason jar full of water.
Ate out tonight with the citizenry: Turkey breast in its own juice, I had 4 portions :rolleyes::p because what they call a portion, I call 4 bites...Overcooked green beans (it is the Deep South doncha know), 2 portions. Small salad (1st time I've had iceberg lettuce in a LONG time) with just picked out of the garden cukes & heirloom tomatoes, squeeze of lemon for the salad dressing. Water
