Primal birthday cake!
I decided to bake my son a cake for his birthday today. (Note that before going primal, the most I ever did in the kitchen was heat up leftovers.) I followed [URL="http://prettyinprimal.blogspot.com/2011/06/perfect-vanilla-cake-grain-freegluten.html"]this[/URL] recipe and also made a variation of [URL="http://www.elanaspantry.com/vegan-chocolate-frosting/"]this[/URL] frosting (I didn't have dark chocolate chips, so I used the organic semisweet non-dairy/non-soy/GF chocolate chips I had in my pantry, and I swapped the grapeseed oil for coconut oil).
The verdict? YUM. All of us enjoyed it (with a big ol' glass of milk -- love being primal!). While this is hardly health food, it's worlds healthier than anything I could have bought at the store, which is what I've done for previous birthdays.

Elana has a whole bunch of different frostings, but the chocolate is the only one I've made so far. Well, I also baked [URL="http://crossfitfw.com/traveling-paleo-coconut-cake/"]this[/URL] coconut cake with frosting yesterday -- and meh, not so good. I don't know if it's because I accidentally used dehydrated shredded coconut (40% reduced fat, ugh -- obviously, I didn't read the label when I bought the package) or if the cake just wasn't to my family's taste, but meh. Also: paleo/primal cakes don't seem to lift/get fluffy, do they? The vanilla cake today was very good, but it's pretty darn flat. I'd been hoping there'd be some rise to it. Alas.

Yeah, Primal/Paleo stuff tends to be super dense. We just got a gluten free chocolate cake mix, and I'll go with a basic cream cheese frosting-- vanilla, mascarpone, cream, stevia or honey.
ETA: re: family wrinkling noses
My mom is sneering and wrinkling her nose about me making my own frosting. "Why don't you just buy some? A can of pilsbury is only a dollar". I asked her if she had looked at the ingredient list for their buttercream frosting lately. Basic buttercream = butter, cream, sugar. Nowhere on the pilsbury list is any of those ingredients. Ew.
I'll make my own, tyvm. It will taste just as good and be better for Grace.

Help -- ACV? I'm guessing BS is baking soda...? This recipe called for whole eggs, not egg whites, but I'll definitely keep this in mind going forward. Thanks!

Not to my 11-year-old son, it's not. And between this and the Carvel ice-cream cake he would have had otherwise, I'm pretty damn happy with this.

Apple cider vinegar!!!It activates the baking soda and causes the 'flour' to lift :)
