That would be really good. I picked up a bag of baby peppers in a rainbow of colors, they will be perfect.

Otherwise you don't have the right combination of mouth feel! Sometimes I take some sour cream to dip in or eggplant smooshed with sour cream....... I've really been on an eggplant kick lately - just can't get enough of this recipe Baked Eggplant: Melanzane al Forno Recipe : Mario Batali : Recipes : Food Network

That looks yummy. What do you eat it on/with? And thanks for the encouragement.
I've arrived in chilly, foggy Provo. Plane was over an hour late. Rental car place lost my reservation. Hotel experience is great!
Coffee with HWC for breakfast and a bite of chicken. Airport lounge had Tillamook cheese - ate 1 oz and water. On airplane ate 1 red bell pepper (from home), 3 oz cheese (from lounge), 2 oz. raw carrots (from lounge), some dried apricots (from lounge) and water. At hotel had 1/4 bowl of queso with green chili, lettuce with walnut oil, hamburger patty with cheddar cheese and 2 strips of bacon, water, a few fries, wine. Now I'm trying to relax enough to go to sleep!:( big presentation first thing in the morning - I'm as ready as I can be, but it sucks! Teacher I don't know and another group of students I don't know. I get to go first. :p (I want to stick my tongue out).
Sleep well and no doubt your presentation will be stellar tomorrow.
:)
You were so right about the lime - the heated-up scallops were ten times better than the original. In addition to all medical career, you could have a primal restaurant or at least a consultation service.
You are soooo funny! :D slept fair. Up in time to review for presentation, ate about 4? Scrambled eggs and 4 slices bacon, a cup of coffee with cream (1/2&1/2). Presentation went well. Lunch protein shake, broth, gluten free flatbread with snack of green tea and dried mango. Dinner what a surprise! Chef sent a menu marked with what was gluten/grain free. I chose to pick and choose. Marinara, sausage, and cheese over broccoli. Mentioned I used zucchini a lot. Came out marina plain with yellow squash (I'd okayed the squash). Sent back saying I needed fat!!;) chef brought correct meal out. Asked how long I was staying, if there was anything I didn't like (salmon) and tomorrow he is happy to go off menu, be creative and make my dinner! Fingers crossed - he was excited and I'm hopeful. Stocked up on some yummy cheese for tomorrow. So lunch will be cheese, salami, raw veg, and strawberries. I've got my poster presentation in the morning and a 10 minute lesson in the afternoon. Poster came out great - will review in the morning. I'm going to wing it with to to use a nebulizer in the afternoon.
Slept okay up from 4-5. Had an egg and 2 slices bacon for breakfast with some coffee. Lunch was 5 slices salami, cheese, veggies. Dinner was chef surprise. He came out and asked if I liked mushrooms, spinach, and blue cheese. What I got was a grilled chicken breast topped with Swiss cheese Dejon mustard Demi glaze and sautéed portacello mushrooms with a side of creamed spinach covered with broiled blue cheese. I almost licked the plate it was so good! :D First presentation was okay - I'd just gotten off the phone with my dad who told me mom was in ICU bleeding (she is okay now). I killed the second presentation. Done with this class. Tomorrow is just listen, last presentation Thursday. Friday biostats 3! :(
