haven't made the ooopsi rolls yet........ how do you use them? like hamburger buns?
I've not made them before, but I plan on using like a bun, maybe to sop up runny goodness, or a sandwich.
Finally got on scale up 2.2 lbs from low before my trip and most of that was probably the pizza I caved and had last night.:mad: you know it didn't taste as good as I thought it would, so maybe that's a good thing. :confused: I have 7 days until I leave again, so I'm going to try and get back into keto-land. I know if I'm LCHF I can drop the 2 lbs before I leave. The challenge is to keep it off or to loose more on the trip. I'm going to try! :) Slept almost 12 hours last night. Since I didn't complete my home tasks yesterday, I get to be lazy until about 1 and then I need to organize my schoolwork, pay bills, and balance the checkbook. Hope I've got enough printer ink to do so - it's been on my to do list since before the last trip! :rolleyes: I plan on making spaghetti sauce and roasting a couple of eggplant for dinner. I want to make the oopsie rolls and cream cheese clouds also. Will raid the freezer for something to cook tomorrow night. I've got spinach and red chard from the basket. I got a flat (8#) of strawberries. Gave my mom 2, froze about 3 and fixed 3 in the fridge for nibbling. Have mangos and 2 pineapples I need to chunk - probably tomorrow. The avacados need to ripen some before they are ready and then I need to go on an avacado spree to eat all 6.
This is crazy - I've got the tin taste in my mouth, so checked ketones and I'm trace to small!!! :)

I must try out those oopsi rolls, although maybe it's not that great an idea for me. (I will go overboard.) I do like the thought of a hamburger bun substitute or even something to make a sandwich. There is a reason sandwiches are so popular - they are darned convenient, and it helps to have something that isn't so conspicuous when eating with other people, like on a hike or some kind of day trip which I have coming up.
Got a dbl batch of oopsie rolls made and cream cheese clouds. Roasted 2 eggplants with garlic and 1/2 head of cauliflower. Large pot of sauce (1# GF hamburger, 1# spicy Italian sausage, can of slivered beets, can of sliced mushrooms, 28 oz diced tomatoes, and 28 oz crushed tomatoes, spices to taste). There is enough food to stay LCHF for a bit. I set out a roast for tomorrow. Will put it in slow cooker with carrots and onions. I will sautéed the red chard to eat with it. My fridge and freezers are full of yummy food and I'm leaving in a week. :(

Do the cats like avacado? Or think they are balls? You could freeze the oopsie rolls to make them harder to over indulge in. They have 0.6 carbs each so 2 for a sandwich is only 1.2 grams. Even if you eat all 6 its under 4 grams!:)
Slept 8 hours - must have caught up! :) plan on a fried egg in bacon grease on a toasted oopsie roll sometime today. Dinner will be roast with red chard. I've got major school work to do today. :(
Didn't do the egg, bacon, roll. Had leftover sauce, eggplant and Parmesan cheese. Roast with carrots and onion was yummy. I washed and chopped the red chard and added it to the slow cooker about an hour before I wanted to eat. Had an oopsie roll with butter - good substitute.

Red chard is really tasty - hope I get more in the future.
I still have 2 cream cheese clouds and a fat bomb figured into MFP to eat. I'm still really under on fat, carbs, and calories. Not quite as low on protein.
I'll have to make those garlic rolls, and the oopsie rolls too. I have all the ingredients for the garlic rolls.
I would suspect the cats but I think they were still in the plastic bag from the store, which was tied at the top. Of course, you never know with cats.
