looking for a good recipe .. ive seen a few online and would prefer everyones opinion here ...
anyone have a go to for this? i want to perfect something before my local group here has a picnic, and im thinkin ill try to make some tomorrow while i make some pulled pork or brisket or somethin ..

You could always add bacon back into the recipe too.
steam sweet potatoes (2 cups cubed) so they still relatively crisp. Chill.
Add 1 v. finely chopped stock of celery, 1/2 red pepper and a couple tbsp of purple onions (all chopped very fine)
dress with: 2 tbsp sesame oil, 1 tbsp (or to taste) soy sauce, 1/2 tsp vinegar and 1/4 tsp squeezed ginger juice + red pepper flakes to taste.
sprinkle with toasted sesame seeds before serving.

I used oven roasted cubes of sweet potato, cider vinegar, honey, toasted pecans, dried cranberries, salt and chopped cilantro for the last batch I made. It was for a birthday party potluck and was a big hit.
made this one .. it was tasty and not crazy overpowering ..
