I probably couldn't find it now, but one of the times I was skipping around on the site, I found where he (thought it was him??) said something about smoothies being one step of processing. That the blending broke up fiber or something? And I am not huge on smoothies, so I figured no harm, no foul.

here are the ingredients, but I changed a couple of things
1 tsp oil (use coconut oil)
4 small scallions, whites and greens separated, chopped
1 tbsp Thai green curry paste (I added 2 TB)
2 cloves garlic, minced
1 lb shrimp, peeled and deveined (I used big fat scallops that I pre-seared)
6 oz (light) coconut milk (no! don't use light like their recipe says - I used regular fatty coconut milk)
2 tsp Thai fish sauce
2 tbsp fresh basil, chopped
salt to taste
basically I pre-sear the scallops, while putting the sauce together in a small saucepan (saute the whites from the onions in a bit of oil, throw in the garlic and paste and heat up, throw in the milk and fish sauce, heat through) then pour over the scallops and heat through, then serve with the green onions and basil chopped up on top.

I just had a nice piece of wild caught Yellow Fin Tuna. Salt and pepper then seared with coconut oil. I then added two pats of butter to the drippins in the pan. Threw in a pinch of cardamon, tarragon, smokey paprika and cayenne. I then added 1/4 cup coconut milk. Salt to taste. Reduced for a few minutes and used as a sauce with the tuna. Very good stuff!!!!!!!
