I put it in my herbal chai or add it to a protein smoothie. You can also make egg nog with it.

Make some tom kha gai soup. It is perfectly primal and quite refreshing in the summer. Essentially, chicken stock, chicken, hot peppers, lemon grass, galangal (ginger family), lime, cilantro, and coconut milk.

I leave mine in the fridge so it gets fairly hard. Then I mix it with berries etc like it's ice cream or yogurt

Thai green curry!!! Add your choice of veggies and meat. Have it with rice if you're that way inclined, or omit rice and eat it as a stew :) Totally flavoursome and hits all your taste buds.

Coconut milk chai is soooooo gooooood. I also use it to make delicious hot cocoa.

No, no, no! Don't stir it! Carefully scoop out the lumps and eat them with berries- divine. Or alone, just as a bowl of goodness. Then drink the liquid or throw it into a curry or smoothie. (Mark is NOT anti-smoothie[if you are hewing to what he says], and even if he were, smoothies are wonderful.)
