Hey, the Human Food Project has come out seriously anti-red palm oil.
Very dull today. Had breakfast out! Haven't done that in ages. A friend and I went to a kind-of-famous place about 40 minutes away. I had the meat lovers omelet cooked in real butter and coffee with cream. It was fun!
After having some salami and cheese that I thought was dinner, I decided to cook bacon-wrapped scallops with chili butter. Will let you know how that turns out.
Well, the scallops were good but not great. They were just missing something, I'm not sure what. Maybe salt? I didn't add any salt because bacon is salty. Very simple recipe - just wrapped the scallops in bacon and cooked them for 25 minutes. Poured butter with chili powder and sriracha over them. Ate. Good. But not the divine culinary creation one would expect whenever bacon and butter are involved.
Lime? Or another acid.....
I think you are right. I have four leftover - when I cook them tomorrow I will add some lime.

Wow - I am reading this just a little while after eating about 3 ounces of Tillamook Extra Sharp White Cheddar with several slices of Genoa salami. I just didn't feel like cooking and everything else in the fridge was raw or wrong. I would rather have had the bacon-wrapped scallops...
Was the advice about lime for cooking as in ceviche? You know, cooking in lime or other citrus as an acid? I think the lime juice in this case is to blend the flavors. The scallops were just kinda blah. But I haven't eaten the rest yet.
I went to church this morning and ended up going to a play in Portland. So I have been away from home for 11 hours! And I had no breakfast! I had some cashews, a banana, and recently (on the way home) some pastrami and cheese. The play was great but really intense and draining.
