Have you tried Udi's products. I love them and they make a bun that is just the best. I prefer them toasted but they are great just right out of the package. I do not eat much bread but when I am craving it I just pull it out of the freezer and it is the best and I have tried many over the years.

Strongly agree. There are gluten free grains you can make bread out of if you a) need bread and b) are really, really sensitive to gluten. Nuts are a moderation, if that, food.

When PUFA interacts with oxygen it spoils / goes rancid / gets oxidized easily. Most PUFA rich oils go bad pretty quickly - therefore nuts have a relatively short shelf life but because they don't "rot" we treat them as if they are spoilage proof. Oxidized PUFA = bad fat.

Oil is not flour, close but not. Most people, I hope, store nut flour and oil in the fridge or freezer which extends the shelf life tremendously. So once again why is this rancid word tossed around so easily, because oxidization makes just about everything rancid eventually.

Nuts have oils in them which go bad, whether they are pulverized into flour or eaten whole. Actually they'll probably go bad more quickly after being pulverized into flour. Many times they are probably rancid before you ever buy them, regardless of how you might store them afterwards. Nuts should not be a dietary staple for many reasons, rancidity is just one.

I made a banana-style bread once probably a year ago when I first started Primal and wasn't aware of how bad it is to bake nut meals and flax. Every once in a blue moon I'll use a nut meal to make a cheesecake crust, but I'll never make some phony bread out of it. Any "bread" style thing I've made since has been with appropriate flours - white rice flour, tapioca starch, sorghum flour, coconut flour, etc. These flours are safe to heat and have next to no polyunsaturated fat.

Ahhh ok, thanks for clearing up the confusion :) I actually made your Coconut Almond Flax bread the other day and it was delicious........probably shouldn't be making it anymore now :(
