I second that. I have to say, the most miraculous thing I've ever tasted was this crispy Bavarian pork rind when I was Munich. I mean, when I took a bite of it was almost so startlingly good I was looking around at people around me thinking, do you know what just happened now? Oh you poor thing - you don't really know. I would definitely fall in love with perfecting a pork rind.
Baking pork rinds wouldn't work at all though... Because it's fat it'll just swim in itself and deteriorate. I'll see if I can think of something. I think I may have an idea... I'll see if the market has pig skin and try pick some up this weekend.
Food for yesterday
Breakfast- 1 hard boiled egg
Lunch - 2 hard boiled eggs, small piece of steak, 2 cups mixed red peppers and baby carrots
Dinner- Bacon wrapped tenderloin and I had made a big salad but couldn't even finish half (not like me at all to not finish it!). 2 pieces of B+G mint, 1 piece lindt 90
Apparently my pork tenderloin wrapped in bacon smelt so good that my room mates just had to have some. It was so moist, probably the best tenderloin I've ever made!
Try baking the pork skin on a rack, so the fat drips down.
Did you do the tenderloin in a roaster, or a slow cooker, or what?
@judj I tend to bake my tenderloin in a roasting pan with broth and olive oil in the bottom. Once it's close to being done I often cut it up into medallions up and finish them in a pan.
@pam Sorry darlin I couldn't find pork skin at the market today! I'm going to call Rob (my butcher) and see if I can get some from him
(Woke up late) Breakfast- 1 hardboiled egg

Lunch- 1/2 of a chocolate omelet (did he say chocolate omelet?!?!) I said chocolate omelet! 4 Eggs, 1/2 lindt 99% dark chocolate bar (will go with 90% next time), goats milk yogurt, raspberries topped with freshly grated parmasean cheese and some strawberry. I still have half of this badboy waiting in the fridge for me!
Snack- Chicken thigh
Dinner (made for mothers day for my mom!)- Mousakka made with eggplant, ground beef, lamb sirloin, goats milk yogurt and parmasean. And a Big salad on the side. Regular supplements
I wonder if there's a call for pigskin:-)
I have to tell Luke about your chocolate omelette. Sounds quite interesting:-) I bet it's pretty satisfying and filling.

Lunch/Dinner- Wings and salad at montana's
Dessert (at my sister's place)- a very unprimal chocoate mint klondike bar... worst thing about all of it is that it didn't even slightly trigger any sense of pleasure. What a waste of calories and sugar...

Glad you didn't like the mint klondike bar. My older son treated me to an ice cream cone yesterday from our neighborhood home made ice cream shop (less than 2 blocks away) -- almond mocha -- and it was delicious. The thought that he did it was absolutely wonderful, but the ice cream actually was super too. Not too sweet, etc. Hmm! Store bought doesn't taste good, but this did!
It tasted exactly how I remembered icecream but completely lacked any "mmm" factor. Doesn't trigger like it used to which was disappointing!
Hey, it will make it that much easier to pass up next time. ;)
