I am not at a place where I can stomach the extra bits yet. and even if I was, I don't have a good source. Which is not to say, if I really wanted to do it I couldn't find a good source. I am interested in your experiment though. Given your issues with dairy and other things this may turn out to be your answer.

I'm working on it. I actually crave my pate now and today, all I could think about was the bone broth. It will take me some time to get the other ones in. But, the longer I go without "junk" and without vegetation, the more my body seems to want these things. In the short one, I think I'll have to mask things a bit -- curry, mix with other fatty meat, etc. until my taste buds become acclimated.
I'm still working on a good, affordable source. That's why I've only done liver (pate) and bone broth so far:) [Well, okay, I'm still working up to those other organs!]

Loving the conversations in everyones journal! Great topics. As for "the bits", i love chicken livers but can not do beef at this time. In truth i have loved pate since i was 3.
I have to say..i love eating this way. For me it seems no brainer, which is what i need.

for me the no brainer was the 10 veggies a day, but then I spent 7 years being a vegetarian. I was also good with the straight low carb where I didn't worry about fat or protein, except that I didn't feel as good.

Well the car is back in the shop. The thermostat needs replacing. Nissan wanted $330 but my regular guy will charge $150.
All in all my outlook is still good, food good even eating @ jasons deli. The wind has been howling and it has gotten cold!!

The wind is crazy here as well, but the sun is shining and it is 60 degrees out, beautiful!

WOW.. feels like a Monday but its not.
Observations:
-Sleep is better. I have woken a couple times in the night but end up falling right back asleep and now its WITHOUT advil PM.
-I am really liking the caffeine free. I think its making a difference.
Feeling thinner (hoping I see this on the scale March 1st ;) )
I made kickin' green chili stew. I call it stew because its more meat than broth. Its awesome! I even put a few jalapeņos in it.
On the dehydrating side:
last night I dehydrated zucchini chips, onions and jalapeņos. My mom bought a huge batch of jalap. so I dehydrated them before they could go bad. I REALLY like the onions I dehydrate, I even put some in the green chili.

I got the apples to work, so I got a bag of those and a bag of pears for Dh. I will try zucchini next.
