Mark (and Richard Nikoley) have written extensively about how these studies tend to be flawed; this might be another one to analyze.
A couple interesting things:
- the abstract itself notes that it may be how the meat is cooked, rather than the meat itself
- the original study ([url]http://cancerres.aacrjournals.org/cgi/content/full/59/17/4320[/url]) appears to put hot dogs in the same category as 'meat', which we know is a mistake.

I suspect the main problem lies with how results are reviewed, the majority of people eating lots of red meat are going to be eating sausages, bacon and burgers with the occasional steak. The amount of nitrites consumed daily should be a bigger factor when determining the results, rather than blaming red meat in general.

I think one thing to consider is this: They are basing this high red meat in conjunction with the "modernized" food pyramid...where you eat a lot of carbs (what...6-8 servings).
Additionally, are they taking into account ALL of the PROCESSED food that the "regular" people are eating? I'm sure chemicals, etc... have something to do with this.
And now I see I'm a little behind the bandwagon as the last post was 6 months ago...
