It's a banana cream pie with meringue. It's four ingredients:
1 can coconut milk, 5 eggs, 5 ripe bananas, 1 packet gelatin.
That's it. You have to make an egg custard - reserve the egg whites, whisk the egg yolks, heat the coconut milk and slowly pour while whisking to temper the yolks into a custard. While still warm, whisk in the gelatin. Place it in a blender with the 5 bananas and puree. Let it sit on the counter to cool to room temperature.
I baked a crust out of slivered almonds, shredded coconut milk and coconut flour. When that was cooled, I mixed in sliced bananas and chocolate chips and vanilla into the room temperature custard, poured it into the crust in a springform pan and let it set in the fridge.
At the end, beat the egg whites til stiff with sweetener, top the pie with the egg whites, brown the meringue under the broiler quickly. Done.
It's just eggs, bananas, coconuts and almonds, really.

Hurray for awful photography. A bunch of eye round, roasted red peppers, horseradish and baked plantains. Under that is 2 lbs of baked white potato fries. I couldn't find a dish big enough, so I used a pie plate. At least they're good for something.
