i think wilted curly leaf kale would work better than lettuce. also, my tapioca flour tortillas can hold up to abuse, but they are very carby.

Hmm...good idea though Kale tends to have stronger flavor than lettuce, which might effect taste, though kale tastes awesome so perhaps that is a good thing.
