Another favorite of mine...and easy
Combine the following:
*One Whole roast chicken, deboned and chopped into bite size pieces (reserve the skin for some other use, like making chicken stock)
*about 3-4 stalks of celery, sliced lengthwise then chopped
*sliced grapes or, if too high in sugar for you, a little chopped apple or dried, unsweetened cranberries (all options taste awesome!)
*chopped walnuts or pecans
Cream together in a bowl before adding to other ingredients:
*Curry Powder (lots!)
*Sea Salt & Pepper to taste
*Rice Wine Vinegar (just keep adding until it tastes "right")
Stir it all together and serve inside big leaves of Romaine Hearts. Chill the rest and you'll have something to eat on the fly for days :)
