    Your favorite way to eat Zucchini

    My garden is overrun with these things and I am getting a little sick of frying them. All my roommates are saying, "make cake or bread!" Well that isn't gonna fly so lets have it, what do you do with it?

    I love to grill it, brushed with garlic butter and with plenty of black pepper. But if I had others around to polish the pan off after I tried one, I'd make these:

    I make a meat sauce with beef, buffalo or lamb, onions, garlic and mushrooms. Cut zuc in half lengthwise. Scoop out seeds and discard. Scoop out some of the zuc and discard or add to meat sauce. Stuff the boats and pop them in a 350 degree oven for 25-30 minutes. If you eat cheese, top them with cheese and broil until the cheese melts.

    You can make up a bunch and freeze them on a baking sheet. When frozen, put them in a zip lock bag.

    Zoodles! Stir fried in the sauce I used for the meat.

    Zoodles also make great "cole" slaw, and there's lots of ways of dressing up slaw. I've made it with homemade mayo, chopped apple, and chopped nuts; just plain with oil and vinegar and a few herbs; mixed with plain yogurt, chopped tomatoes, and garlic... the possibilities are endless!

    I recently found the below recipe. I haven't made it yet, but it sounds really good!

    Zucchini and Bacon Soup

    3-4 cups chicken bone broth
    3 pounds zucchini (about 5 medium)
    1 cup chopped onion
    3 oz. chopped cooked bacon
    2 cups milk or cream
    1 tsp. black pepper

    Heat broth while cutting zucchini into 1 inch chunks. Add zucchini and onion and bacon. Bring to a boil, lower to simmer, covered, 10-12 minutes.

    Remove from heat and allow to cool several minutes.

    Puree with an immersion blender or in a stand blender. Return to pan, add milk/cream and pepper to taste. Reheat and serve.

    We pick ours very small, hardly bigger than a hot dog. It keeps them from getting away from us. They are too small to spiral cut, but big enough to slice in half lengthwise and grill. Sliced crosswise, they are great in any salad or stir fry. DD eats them whole, like a carrot, with some kind of dip.

    My family also loves zoodles, but I usually buy zucchini big enough to spiral cut.
