I made a peach crumble to serve 6 people but am not sure if palm sugar is strictly paleo. I think it comes close but may have to stay in the 20% non-paleo pile. Honey, stevia, maple syrup or flakes etc would also work.
Shake up a can of coconut cream thoroughly and put in fridge overnight. Chop 5 peaches (apples, pears, plums, cherries, strawberries, berries) into baking dish, stir in juice of 1/2 a lemon, 1 tsp vanilla extract and 1 tablespoon palm sugar
Process 2 tablespoons palm sugar and 1 cup almonds (or other nuts) until mixed and nuts are the consistency you like, spread over peaches and bake (can't remember how long) mod oven 15-30 min until browned.
Stir coconut cream to even consistency (should look like thickened cream) and spoon a few tablespoons over each serve.
