One more thing - for me, coconut butter was/is the holy grail of keto indulgences. That can be used in the cookie as well. It totally stands alone, though. It's a great source of fat and a little fiber and is pretty low carb. There are tons of things you can do with it.
Be careful, though - that stuff is dangerous. I still don't bring it into the house unless I can afford to have a whole jar worth of coconut butter in my gut. Total crack!
Thanks for the recommendation, Jen! I have heard of coconut oil FatBombs and was going to give it a try, now I have something new to add some variety to my mornings. Though, The classic bacon and eggs seem to do me just fine most of the time :)
