About Giblets
I've lived all over the USA, east coast, west coast, gulf coast, many states in between. Finally ended up back on the family homestead in Michigan.

For almost 20 years I worked as an engineer for consulting firms, but then went to law school for a change of pace. Former vegan (10 years of it, before finally deciding that it was working against me, health-wise). After reading "Neanderthin" back in 2001, I've been Paleo ever since. I'm still refining my approach to food and health, and lurking on these forums for years has helped a lot.

Motorcycles, hiking, food/cooking, reading.
Country lawyer, public defender.

I have great faith in fools; self-confidence, my friends call it.

My diet? Very low carb to initially lose weight, then moderate carbs (the past 12 years) for effortless weight maintenance. For me, the "carb curve" works like a charm. Once a week or so, I eat only one meal during the day (at late evening), as sort of a mini-fast.
