There is a fairly lengthy article written by Mark Sissal on the blog. It goes into pretty good depth about all things fermented, including pickles.
Personally, I make and eat pickles. Just about anything---vegetables, eggs, and sometimes to be different I try to 'vinegar' meat. The last isn't always close to my favorite though.
