Just buy 100% cacao chocolate. Here's a couple (there's plenty more!):

    Pralus

Le 100%, single origin, dark chocolate bar (Organic)

    Michel Cluizel

    Noir Infini, 99% cocoa

    Dagoba

    Prima Materia 100% (Organic)

    Domori

    Chacao Puro 100% (Organic)

    Domori

    Sur Del Lago Clasificado 100%

    L'artisan du Chocolat

    Carenero 100%

    Lindt & Sprüngli

    Excellence Noirissime 99%

    Vintage Plantations

    Arriba 100% 2004

    Pacari

    Raw Organic Chocolate Bar, 100%

    Bonnat

    100% Cacao

    The "Seven Deadly Sins"

    • Grains (wheat/rice/oats etc) . . . . . • Dairy (milk/yogurt/butter/cheese etc) . . . . .• Nightshades (peppers/tomato/eggplant etc)
    • Tubers (potato/arrowroot etc) . . . • Modernly palatable (cashews/olives etc) . . . • Refined foods (salt/sugars etc )
    • Legumes (soy/beans/peas etc)

Hmm... What is oligofructose, the second ingredient in Jimmy's chocolate bars?

Also, if one cannot stomach 100% cacao chocolate--and I hope someday to be able to--there's always the wonderful 70% Green and Black's.

        Thanks for the list Tarlach.

Agnieszka, you must try G&B's 85%. I thought I waouldn't like anything above 70%, but after trying the 85%, my Trader Joe's 72% Belgian chocolate tastes too sweet.
