  • Yak Meat

    Hi Everybody,

I got some ground yak meat today at the farmers market. It's frozen, and I'm still trying to decide what to do with it. Anybody else eat yak meat? Any suggestions for something cool to make out if it?

So just in case nobody replies, here's a recipe I found online at http://www.vermontyak.com/index.php?p=eat:

    CHIPOTLE YAK CHILI

    2 T. olive oil

    6 cloves garlic

    2 lb. ground yak

    1 large onion

2 chipotle chilies in adobo sauce, chopped

    t. black pepper

    1 can black beans (optional)

1 t. salt, or to taste

1 28 oz can diced tomatoes

    1 bay leaf

    1 t. ground cumin

    2 t. dried oregano

    3 T. chopped fresh cilantro

Brown the garlic, onion, and ground yak in the olive oil. Add the rest of the ingredients except the cilantro. Simmer partially covered for about 45 minutes, stirring occasionally. Stir in the cilantro and simmer uncovered for 5 minutes. Add more salt and pepper to taste if necessary.

I made coconut-milk based curry with ground lamb today. I guess you can make something similar. Remove the black beans from your recipe and add coconut milk, you'll have a primal curry-like coconut-milk chili.

ETA: Didn't notice the optional part, so ur recipe is primal.

Thanks, maba, that's a good idea.

I wanted to leave the recipe intact as I found it online and let people decide for themselves to eat the beans or not. For me, I would definitely leave them out.
