Ya try it! We did sweet potatoes on the grill a while back (we've only had them twice in the last 6 weeks I think), cut into 1/2 inch slices. We didn't do indirect grilling since the pieces were big enough, plus they got nice grill marks and carmelization I hope the butternut squash turns out well!
Cook the onion and garlic til translucent in the butter. Add squash, broth, spices to the onion. Cook on medium-low heat until liquid is bubbly and the squash is softened. Puree the remaining mixture then top with a dollop of Greek yogurt when serving.
