  • Thai-Style chicken curry soup

    I sauteed some leeks, carrots, red bell peppers, and lemon-grass in coconut oil. Then, I added some chicken stock and the meat of one roasted chicken. Seasoned it with a Thai red curry paste. Added a can of coconut milk. Just before eating, threw in a handful of cilantro and bean sprouts and a splash of lime.

    Simple and tasty.

      Oh yeah, if you like it hot, a little bit of Sriracha sauce is required.

        So, I got my cookbook yesterday, and discovered a soup nearly identical to what I just did in the book. If you add in cauliflower and omit the leeks, bell peppers, and carrots, the recipes are pretty much the same.
