    LOL...Rhubarb is a vegetable, but most associate it with baking - so it's a fruit to most. This is one of my all time favorite things to eat. It's getting hot in the desert, so this is refreshing and tasty.

    Can someone please share their favorite Rhubarb Pie with me? Thanks! J

    Here are the ingredients that youíll need for the Rhubarb Kompotte

    A serving is usually about 6 oz.

    I used a whole bunch, because we love it, but you can easily adjust the amount of Rhubarb to your liking.
    9 large Rhubarb stalks
    1 cinnamon stick
    14 whole cloves (about a tsp)
    1/4 of a lemonís peel
    2 tbsp raw honey
    water enough to cover all the Rhubarb

    You will need a soup pot. Add all sliced Rhubarb, cloves, lemon peel, cinnamon stick and 2 tbsp of raw honey, and cover with water just above the Rhubarb and bring to a boil. Boil for 1 minute, cover, and turn off. Let it stand for 5 minutes, uncover and let cool for 15 minutes. Then transfer into refrigerator for chilling. Serve as suggested above anytime.

      Rhubarb pie was my favorite as a kid. I'm going to have to make the recipe above and add some cream as lil_em mentioned to relive childhood memories...sans pie crust, of course. Sadly, I don't have a rhubarb patch like we did on the farm growing up.

        I haven't had it with whipped cream in so long. Oh goodness, I know what I am having when I get home. Thanks Beef Cake and lil_eathmomma. Once in a while I will bake something, but I haven't come up with a good pie crust yet. It will have to be made with almond flour or coconut flour. suggestions as to what will work best?

          I was inspired by this to grab some rhubarb. I did it a little differently but it was really good. I used 4 stalks of rhubarb. I took out the honey, lemon,and water and added the juice and zest from one orange, plus about a pint of strawberries....and then topped it with homemade whipped cream. It served four.
