    I'm doing this recipe.

    Instead of the lamb in using goat about 1.8kg slightly smaller than the 2.5kg lamb .

    Keep the same cooking times

    What u think?

    i love both lamb and goat! enjoy!

    they are pretty interchangeable, so no worries here.
    As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy and to make plans.

      Kept it the same used temp prop,
      64c medium rare

        The times are pretty similar. The only difference is that lamb tends to be fattier and goat can get dry. Some broth (or red wine) cures this.

            Beauty! I do like Raymond. I keep meaning to salt bake something ... I'm a big fish eater. I have done lamb in a large parcel of pastry (prior to primal eating); same process, and you crack open the pastry and eat the meat inside - it just fell apart with a spoon. Gorgeous!

            If you're doing this again ... and by the sounds of it, you're not that confident a cook, asking for timing, just cook it. It can't be overcooked. You can cook lamb, mutton or goat sealed up like this for a good long time and it just gets better and better and better.
