I adore beet greens (i guess that's what you mean by beet tops?). They are sweeter and less chewy than kale, and from what i've read, got more nutrition.
I just prepare them the same you do kale--you can pan fry with bacon/coco oil, or boil them. Whatever you like. I luvs em.. They're usually gone before the beets are!

This is what I do with ready cooked beets to make them super delicious. Take one onion, slice quite finely and fry in butter with some olive oil to stop the butter burning. Fry until softish, then add the cubed beets. Fry, stirring every now and then, until hot through. Add some salt and pepper, stir again and add a large dessertspoon of bitter orange marmalade. Stir again to coat in the marmalade and serve ..If you want more flavour, some ground ginger sprinkled on and stirred in with the marmalade is great.
