  • It's 11am and you NEED chocolate...

    If there's one thing I miss since dropping dairy and going strict paleo, it's yogurt... It was my way of having something a little sweet and playful and calling it a "healthy lunch".

    Today I was browsing my fridge and realized I didn't want savory or salty... I wanted sweet. But I didn't want a cheat, I wanted something dessert-like which I could still say was a healthy, balanced meal. Threw a few things in a pot and the result was better than I dreamed.

    Quick Paleo Mousse

    - 3 large egg yolks
    - 2 tablespoons room-temperature ghee or butter
    - 1 heaping tablespoon cocoa
    - 2 tablespoons xylitol maple syrup (I use Nature's Hollow, the ingredients are all clean. You could probably use stevia, honey, or some other sweetener though).

    Put over low heat and stirred until the yolks were cooked. The texture is like crumbled chocolate cake, the taste is like a decadent mousse, and I haven't been hungry for hours since. I sense a new staple in my life...

    That sounds epic. My vice is making ghetto candy bars with an unsweetened Ghirardelli square, squirt of creamed coconut, and a single toasted almond or clementine wedge on top.

      Not gonna lie, I love unsweetened chocolate... my friends think I'm nuts but I don't even like the taste of 70% or 90% anymore, let alone anything sweeter. I'll have to try the coconut and almond idea!

        Wait... how do you squirt creamed coconut? Last I checked it was solid at room temp.
