  • Pakistani Style Spicy Spinach

    A very rich and satisfying spinach dish

    12 oz bag of ready-to-use Spinach
    1/2 cup Ghee or Coconut Oil (I used 1/4 cup Ghee and 1/4 cup CO)
    1/2 medium Onion, chopped
    3 cloves Garlic, peeled and chopped
    1 small Tomato, chopped
    3 Mushrooms, sliced
    1 tsp. Tumeric
    1 tsp. Cumin powder
    1 tsp. Red Chili Powder
    1 tsp. Coriander powder
    1 tsp. Garam Masala
    Salt to taste, if desired

    Fry onions in Ghee until amber (don't let them burn). Add all spices EXCEPT Garam Masala, continue to cook a couple more minutes. Add Garlic, and cook for another couple minutes. Add Tomatoes, Mushrooms and Garam Masala; continue frying until mushrooms and tomatoes soften. Add Spinach a few handfuls at a time, folding it into the hot mixture, and adding more as it wilts. Keep stirring until spinach is uniformly cooked and combined with the rest of the mixture. Makes about 3 cups.

                  I only had three mushrooms...but you could definitely put more in ;-)
                  In retrospect, you could probably use a little less oil, too...but it was so yummy this way.

                        Made this today, to go next to my lamb curry. It was pretty dang good! Only thing I would change is that next time I'll be more generous with the tomato. I used canned tomato because the fresh ones looked like watery mush. I would use at least half the can next time instead of just one tomato.

                          Always like to err on the side of more tomatoes whenever possible, myself. And also more hot stuff ;-)

                          I can't quite remember, but I think the only reason I made it with one, is that I only HAD one.
