  • Fast salad dressing

    Balsamic reduction
    Walnut oil

Drizzle over salad or if making enough for the week, 1finger vinegar to 2 fingers oil.

It's my 10 yr old's recipe and it ROCKS!

I love the combination of walnut oil and balsamic vinegar, I just have never reduced the balsamic. Too lazy I guess. For a kick every once in a while I whisk in a bit of Dijon mustard.

I sprinkle over my salad salt, a grind of pepper, a few drops of vinegar, and a glug of olive oil. Mix at the table and eat.

I picked that habit up in Spain, where the American concept of putting a "dressing" on the salad is rather alien.

I like adding soy sauce and sesame/olive oil. Sometimes I also add rice vinegar and honey.

1 cup oil of your choice
1/2 cup vinegar of your choice (I like balsamic or a mix of balsamic and red wine vinegar)
1 tbsp lemon or grapefruit juice
          2-3 tsp dijon mustard
          pinch of salt
          pinch of pepper

Bottle and shake. The mustard helps emulsify the mixture.

Do you use tamari? Soy sauce contains gluten.

lately I've been using coconut aminos to get away from the soy entirely. It's fermented and tastes just like soy sauce.

My favorite dressing is a couple spoons of yogurt and salsa.

Walnut oil and salt with sprouted pumpkin seeds and soaked almonds make any greens taste great.
