    YUM!

    I've done this with a mini muffin tin and a piece of hotdog in each muffin.

    Growing up it was always Jiffy mix w/ jalapenos. And molasses. *Homer Simpson drool face*

        For some reason, I like the looks of yours much better than the paleocupboard ones. Might have to try these tomorrow .
        Some people just need a sympathetic pat... On the head... With a hammer.

                        My batter was way to runny to scoop and make balls.

                        still made good muffins but man i wanted hush puppies.

                          Back down on your oil. It should not be runny at all, but very pliable so you can form them into balls. Before I went paleo, when I used to make bread from scratch, my friend and I noticed that the amt of liquid had to vary with the humidity. Sometimes the same recipe would take more or less liquid. I didn't really expect that here, but obviously the same amt of oil that made mine "just right" was too much for yours. Back down to 1/4 or 1/3 cup oil and then slowly add it to the mixer until you get a batter that is very workable and moist.
