My batter was way to runny to scoop and make balls. still made good muffins but man i wanted hush puppies.
Back down on your oil. It should not be runny at all, but very pliable so you can form them into balls. Before I went paleo, when I used to make bread from scratch, my friend and I noticed that the amt of liquid had to vary with the humidity. Sometimes the same recipe would take more or less liquid. I didn't really expect that here, but obviously the same amt of oil that made mine "just right" was too much for yours. Back down to 1/4 or 1/3 cup oil and then slowly add it to the mixer until you get a batter that is very workable and moist.
