  • Special Breakfast Eggs.. Or Anytime!!

    Enough for 2:

    6 Eggs, gently beaten with fork
    1 Spring Onion, chopped finely
    Cup of Chopped Mushrooms
    4 Rashers Thick Bacon, cut into strips
    4 Cherry Tomatoes, halved
    1 Avocado, cubed
    Sprinkling of Chilli Flakes
    Sprinkling Smoked Paprika
    Sprinkling Turmeric
    Sea Salt and Black Pepper, to taste
    Butter, to cook

    Put butter in med hot pan.
    Add bacon and cook until starting to brown.
    Add spring onion, mushrooms, tomatoes and cook until soft and bacon cooked.
    Add eggs and spices (to taste, I like lots of chilli), scramble until eggs just cooked through.
    Add avocado, salt and pepper, mix through.
    Serve!

    If I have some fresh spinach to use, I sometimes add this too. This is very tasty, filling and you can make many variations. It's a nice change to plain scrambled egg!

        You can do almost anything with eggs.
