I started using real cocao butter with just a little bit of coconut oil to have the chocolate stay firm outside of the fridge, just like the storebought chocolates. Just substitute the coconut oil with cocoa butter one on one.

Yes but they will melt in the warmth of your hands so eat them quickly and if you are giving them to kids, look out for sticky fingers.

I was looking for cocoa butter but haven't been able to find any locally. Where do you get yours?

Ordered it online and later found some in a local health shop that also supplies protein drinks and cocao powder. Online Amazon has it, I live in the Netherlands and ordered it crooks dutch supplier.

my health food stores have it. How far are you from Escondido? There's a Sprouts there that should carry it (they also have raw milk... at least they did when we were there in October)
Otherwise, Amazon is the center of the shopping universe.

If you can get your hands on a cocao fruit, it is delicious as well. You suck the fruit off the seeds and spit the seeds out later for roasting.

Great thread! +1 for Lindt 90%, but I have not tried many of the rarer bars like you all have.
Full on Primal family and loving it!!!
This is going to be a big year for vitamins and minerals!

It is very hard for me to find chocolate without Soy Lecithin in it. I have had the Lindt but it says it has the Soy Lecithin.

I once found a brand that did not have it, but I completely forgot what it was. Anybody know?
Stumbled into Primal due to food allergies, and subsequent elimination of non-primal foods.

ive constantly wondered about this with Lindt.

their 85% dark choclate ingredients are as follows: Chocolate, Cocoa Powder, Cocoa Butter, Sugar, Natural Bourbon Vanilla Beans.

whereas the 90% is this: Chocolate, Cocoa Butter, Cocoa powder processed with alkali, sugar, soy lecithin(an emulsifier), Bourbon Vanilla Beans.

Why does 90% have alkali processed powder AND soy lecithin when 85% has neither of those things? I know mark posted awhile back that soy lecithin in such small amounts as in chocolate shouldn't cause a problem but why is it in there at all?

Also green and black organics 85% doesn't have lecithin in it and is fantastic.

Thank you! I will keep on the look out. Sounds like 85% is what to look for, as most places carry Lindt.

I am actually allergic to soy, so the lecithin matters to me. I don't know if it's enough to get a reaction, but I don't want to try!

                            Lindt 99%:

"Cocoa mass, cocoa powder, cocoa butter, brown sugar."

I bloody love the stuff. It's a real indulgence for me. I melt an entire bar then dip some dried fruit into it, washed down with some rich red wine. this isn't a weekly thing, though. More like monthly ha.

I really love Ombar chocolate - they have a variety of different types but they are all raw and only sweetened with coconut. Their 72% bar is cocoa mass, coconut blossom sugar, cocoa butter, and bifudobacterium lactis, and that's it. I think you can only get it online atm though...

I like Lindt 90% (99% is too bitter for me, but 85% too sweet). I've also been using raw cacao more recently and am a big fan of the stuff from The Raw Chocolate Company....they make the most amazing raw chocolate covered mulberries!
