I made a peach crumble to serve 6 people but am not sure if palm sugar is strictly paleo. I think it comes close but may have to stay in the 20% non-paleo pile. Honey, stevia, maple syrup or flakes etc would also work.
Shake up a can of coconut cream thoroughly and put in fridge overnight. Chop 5 peaches (apples, pears, plums, cherries, strawberries, berries) into baking dish, stir in juice of 1/2 a lemon, 1 tsp vanilla extract and 1 tablespoon palm sugar
Process 2 tablespoons palm sugar and 1 cup almonds (or other nuts) until mixed and nuts are the consistency you like, spread over peaches and bake (can't remember how long) mod oven 15-30 min until browned.
Stir coconut cream to even consistency (should look like thickened cream) and spoon a few tablespoons over each serve.
Paleo Mug cakes. Very easy, quick and tasty. My favorite is get a mug, smash up a banana at the bottom, add 2 Tablespoons almond butter, 2 heaping Tablespoons cocoa powder, 1 egg, mix thoroughly, put in microwave on high for 2 minutes. Very nice treat. Add in maple syrup if you like it sweeter.
Customize it with nuts, dark chocolate chips or other add ins to make it your way.
Chocolate mousse - melt dark chocolate in a bain marie, add in 3 egg yolks, and fold in 3 whipped egg whites. Chill before serving. If you really want, you can add a splash of brandy to the mix, but if you're using good quality high cocoa solids chocolate, it can make it seize.
It's not all paleo/primal, but there are a fair few that are. Remember fudge? Oh yes.. it's in here. Brownies? Chocolate Mousse? All these sugar laden foods with a one way ticket to high blood sugar are now back on the menu! Some recipes can obviously have things left out such as the inclusion of honey/agave/artificial sweetners etc.. but for the most part, theres alot of primal friendly desserts. This blog deserves a medal imo
