  • Cheesecake fix

    Make your own cream cheese (or yogurt cheese) using a European style full-fat plain yogurt such as Straus or Trader Joe's. See below for directions if you don't know how to make it.

    Once you have your cream cheese add:
    Juice of half a lemon
    1 tsp vanilla
    1/2 Tbsp Xylitol (or other sweetener of choice), optional

    Try it without the sweetener first... almost doesn't need it at all. Eat off a spoon... yum!

    No homemade cream cheese?

    1 block Philadelphia cream cheese 8oz, softened
    1/2 cup sour cream
    Juice of 1 lemon
    2 tsp vanilla
    1-2 Tbsp Xylitol

    Mix all together... enjoy!

    Form in 4" Chef's rings and push berries into the top ... set in the fridge. The rings slide off easily once on the plate.

      I added this to the original... if you don't want to make your own cream cheese...

      No homemade cream cheese?

          This morning I needed something quick in the few minutes between one job and the next. A company here makes the most divine yoghurt (this one was lemon myrtle - an Australian native plant that tastes, funnily enough, exactly like lemon - and macadamia nuts), but they use honey as the sweetener. Because it is far too sweet for me, I use about a table spoon of it to about 2 of greek yoghurt. Today, I also added some 'coconut crunch' (a Fijian product, the coconut flesh kind of like desiccated coconut but has the brown bit attached still) and it tasted exactly like lemon cheesecake. It was divine!

            Wow this one is the great recipe and I hope I can finally able to make a real cheesecake without any mishaps and flaws. Thanks for the recipe.
