    Hi all,

    Really proud of myself today. I am working myself up to gradually 'go paleo' but thought I did well. Had cereal and soya milk this morning, which I am glad I did because just two hours later I was starving and it really made me realise how 'empty' those grains are

    So for lunch, I put together a sort of 'nicoise':
    • 1 tin tuna
    • 2 boiled eggs (sliced)
    • 1 avocado (chopped)
    • A handful of black pitted olives
    • Tablespoon of olive oil
    • Tablespoon of balsamic vinegar
    • Some black pepper

    Just mix it all together and enjoy

    Realised afterwards that I could have cooked up and added some frozen green beans I had, but will know for next time.

    I was working from home today and was expecting to become hungry at any moment - I think my brain was telling me it wasn't enough, just because there hadn't been a huge lump of carb slapped on the plate! But I didn't feel hungry for hours and hours. It was great

    For dinner I made cottage pie with cauliflower 'mash'. This makes enough for 4 portions (sorry about the measurements as some people may need to convert them). This is pretty much the same as the one in the Primal Reader Cookbook:
    • 750g minced beef
    • Two generous handfuls of frozen green beans
    • Two generous handfuls of frozen carrots
    • 1 red onion (white onions upset my stomach)
    • 1 large cauliflower
    • 1 beef stock cube, mixed with one cup of boiling water
    • 3 tablespoons butter
    • 1 tablespoon dry rosemary
    • 1 tablespoon dry thyme
    • Salt and pepper to season

    Chop up the cauliflower head into chunks and steam/boil until tender.

    Meanwhile, cook up the beef, onion, carrots and green beans, add the beef stock, stir in the rosemary and thyme, then season with salt and pepper. Put the mixture in an ovenproof dish.

    Put the cooked cauliflower, with the 2 tablespoons of butter, into a food processor or mash it if you don't have a food processor.

    Spread the cauliflower over the beef mix and then divide the last tablespoon of butter up into small amounts and put each amount on top of the cauliflower topping. Bake in the oven for 30-35 minutes.

    I was so surprised at how delicious the cauliflower mash was and will definitely be having it again. It was lovely and light, and I don't feel all bloated and sluggish

    Nice! The Cottage Pie is pretty much how I make mine.

      Later Edit : Just finished cooking the Shepard's Pie - totally amazing
      Too bad i can't taste it / eat it right now as it's my fasting day today (a vicious quest, right? to cook and not being able to eat the finished dish... )

        Can't wait to try the tuna nicoise. I've had the Primal Reader shepard's pie and it was great.
