i dont like bacon that much so i tend to go for something with eggs. 90% of the time, i just have a camembert or brie omlette. heat up a pan, put in a knob of butter. whisk up two eggs in a cup with a fork. pour them in the pan. slice over about 30g of brie. grind over some black pepper. cook till the cheese has melted. fold in half and slide onto a plate. you can dress it up with herbs and veges etc. or use things like prawns or whitebait or smoked salmon or avocado instead of or additional to the cheese.
depending on the season you can have things like fruit and heavy whipped cream in the summer, or a good bowl of meaty soup in the winter. even a pot of steamed mussels is nice.
If I didn't eat bacon and eggs, I would probably stir fry some veggies and meat and eat that for breakfast. For some reason, in my mind, breakfast always includes a skillet! Stir fry is super easy (good for me since my brain doesn't always work in the morning - just throw it all in, it'll work out!) and fairly quick.
