  • Salmon in coconut milk?

    Does anyone have a recipe that isn't grilled? Poached or sautéed is fine. I have a really nice wild-caught filet and we haven't had meat in coconut milk in a while, so I promised the kids I'd look for some coconut curry thing. TIA

    I just got back from Jamaica where I watched a woman make a simple "steamed ginger fish" which was fantastic. She used snapper but I'm sure it would be great with salmon. Basically, throw some oil and butter in a pan and cook some thinly sliced carrots, onions and zucchini- or whatever veg you'd like- for a couple of minutes. Add in a good pile of minced garlic and ginger and some sliced hot peppers, and cook another minute. Add your seasoned pieces of fish, a few sprigs of fresh thyme, and a couple cups of coconut milk. Simmer covered for ten minutes or so, and then adjust seasoning.

      A really delicious way to cook it is to add chilli and lime to the coconut milk (1 chilli, juice of one lime ?experiment) and poach the salmon. It is a lovely combination.

        After you put the lime in the coconut, do you shake it all up?

          Thank you, Miss Lindsay and katemary. I used this Coconut Ginger Poached Salmon « Crunchy Soup recipe but the Jamaican one sounds like one to try next.
