  • Beet Kvaas question

I put up some beet kvaas on Oct 29th of this year. I put it in the coolest room in the house and promptly forgot about it (it was under a chair). While on my knees and elbows the other day, I turned my head and saw it.

How do I know if this has gone bad or is just very well fermented. At this point, I'm almost afraid to open it lest I've created some new beety life form.

Thanks in advance for any help.

If it tuned slimey it's gone bad. Toss it.

If it hasn't turned slimey/grown stuff then it might be vinegar. You could use it for making bone broths, I guess.

If you cut the beets on the small side, it may have started going the way of alcohol.

I say, if it looks/feels okay, do a small taste test near the sink.
