  • What to do with a dozen egg whites?

    I just made homemade eggnog for a party I'm attending tonight. From my own eggs - 12 beautiful, deep yellow yolks in the batch. So now I have 12 egg whites (about 2 cups worth). They have a tiny bit of yolk in them from the separating process, so aren't really good for meringues, even if I did want to make something with soooo much sugar.

    Any other bright ideas? I hate to waste them.

    Make a bunch of whiskey sours. Here's the recipe:

    2 oz. whiskey, 1 oz. simple syrup, 1 oz. fresh-squeezed lemon juice, 1 egg white

    Dry shake it (no ice) vigorously. No, that's not vigorously enough. More vigorously.

    Add ice to the shaker. Shake it twice as vigorously as the dry shake.

    Pour into a cocktail glass. If it's liquid, you didn't shake it good enough. If it's a creamy, foamy, lemony deliciousness, you did it right. Now make one for me!

      Savoury meringues? Whip them until you get stiff peaks, season them up with garlic, herbs, spices, then fry gobs of it like pancakes, almost, in whatever fat you want. They brown nicely and are pretty darn tasty.

          Use half of them - RAW! - in your pre-workout drink: Blend them in diet coke with one tablespoon of gelatin powder and two tablespoon of brewers yeast! Make sure to get rid of the gas in the coke before putting into blender. The other half, also RAW! - you can use in your post-workout shake: Blend the whites into milk and add some chocolate powder and also a spoonful of plain gelatin powders...

              You could always make macaroons. They only require a few ingredients. There are tons of recipes out there; most of which are very similar to this one:

              2 egg whites
              1/4 cup honey
              2 1/2 cups unsweetened coconut flakes
              1/4 teaspoon vanilla

              Mix the egg whites and honey together, add vanilla, and then add the coconut flakes. Refrigerate for 30 minutes, then form into balls using a cookie scoop (or use your hands). Put them onto a parchment line baking sheet and bake at 350°F for 10-12 minutes.

              Enjoy it if you're into that sort of thing. I've had the recipe forever, but I've never done anything with it so I can't attest to the flavor, nor do I have any tips. But there you go if you're interested in macaroons.

                      take them all and mix with 1/2 cup coconut butter, 1/4 cup cocoa powder, 56g melted dark chocolate, 60-70g puree of something(pumpkin, banana, avocado, etc.), and some sweetener. Add about a tsp of baking soda and throw in any thing else you want(nuts, fruit, coconut, nibs, carrots, broccoli, pork rinds?WHY NOT!)

                      put into muffin tins or a big pan or something and bake and make scrumptious chocolate deliciousness. top with coconut butter/maple sauce frosting. a few tbsp coconut butter and 1 tsp maple syrup mix together and eat!

                      LOW CARB HIGH FAT EAT IT ALL IN ONE SITTING!

                        Dear god, why your recipes so vomitous?

                        Just mix them with whole eggs and make omelettes/frittatas.

                          You can freeze them if you don't need to use them all yet! I would also second (or third or fourth) meringues... even if they're not perfect due to some yolk! Or you can use some as a face mask (I've heard it's great on the skin). There are plenty of recipes that can be modified to more primal that use egg whites and don't require them to be 100% perfect white!
