  • The best pumpkin paleo pancakes

    I just made the best pumpkin paleo pancakes and wanted to share the recipe:

    - 1/3 c organic (bpa free) canned pumpkin
    - 1/4 c organic egg whites
    - 1 organic egg
    - 1 tbs coconut flour
    - stevia to taste
    - pumpkin pie spice blend with some added ginger
    - 3/4 tsp baking powder
    - Shake of sea salt

    Cook pancakes (this makes two big ones) in coconut oil on medium heat until dry and fluffy.
    Top with:
    - 1tbs pumpkin seed butter
    - Couple tsp of dehydrated maple flakes and some slivered almonds

    Delicious!!

    Husband says too pumpkin-y.... oh well, will try some variations and report back!

      Well they are "pumpkin" pancakes That's hilarious. Well, you could always try reducing the pumpkin and increasing the coconut flour.

        This is a great recipe - if you use canned pumpkin the coconut flour isn't needed - at least that is my experience and the anutor updated the recipe to note that. This recipe uses quite a few more eggs than yours does so that probably helps to moderate the pumpkin taste:
