  • Grass fed beef chili - fantastic!

    I found some local grass fed ground beef for $5 a pound and decided to make some Texas Chili. I don't follow a recipe but here's what I did.

    In a porcelain lined dutch oven:

    Sauteed a few cloves of garlic in bacon grease
    Added 2 pounds of beef and browned it
    Don't drain the grease!
    Add about a cup of water and a cup of tomato sauce (I used organic canned so count this as an 80/20 issue)
    Add 3 tablespoons of chili powder (primal or paleo? who knows if it is - its spice)
    Stir it up, cover, and simmer on low for at least 30 minutes - or longer if you want.
    Salt to taste

    Its pretty basic but good. Its easy to add other stuff if you like. I hate onions so those are omitted. I come from the belief that Texas Chili is just beef, spice, and a little tomato sauce. Like I said I don't use a recipe but I like it. 3 tbsp of chili powder may me a little spicy for some, so add less if you don't like hot stuff.
