  • Sweetbreads & bollocks...

    I just got my order from https://www.alternativemeats.co.uk/ and along with 45kg of "pet food" (rose veal scraps.. which actually looks pretty good.. may have to pop some in the people freezer...)
    I also got some Rose veal sweetbreads & fry (aka Bollocks) & I need some ideas what to do with them.
    Having never had ether the above I dont have a clue the best way to cook them...



    Oh I also got Goat steaks, Kangaroo sausage, Wildbeest burgers, Springbok stewing meat & Impala Burgers (But I think I can manage those)

    And for anyone in the UK that's interested, the service from the above company was top notch, I will def be ordering from them again.

      Its def. NOT liver ive got here...
      just trying to figure out how to do so hubby dosent figure out what it is, before he actually taste it. (Men are so squeamish sometimes...)

          lmao google is usually your friend in these cases. you would need good virus protection software lol but google "testicle recipes" or something like that and see what comes up.

            Mmmmm Braiiiiiiins.........
            I dont even know if you can get those around here.. im ordering from several companies (to test out, try some new things & stock up the dogs freezer) but ive not seen any brains...

              i am trying to remember what the other name is for them. mountain something? that may be a safer place to start googling or "unusual offal recipes". lol as you can see i am not game enough to try either!

                I would have thought brains were hard to get in the UK because of prion diseases - BSE and scrapie. Fortunately, we have no such problems and lamb brains are readily available

                      I did a lil checking, turns out its ok to sell cow & sheep brains from animals under a year old but illegal to sell if there older.
                      still couldent actully find anywhere selling them though...

                            Well I ended up keeping it simple (whats the point of covering up the taste if the whole point of getting them is to see if its something I like?)
                            Poached the sweetbreads in salted water for about 5 minutes & then sliced into strips (sorta, texture makes that a bit...difficult) then tossed lightly in a corn flour (corn starch for the Americans) and salt/pepper mix, shook off excess & pan fried in pork lard/Butter (half & half, butter adds well.. butter.. Lard keeps the butter from burning)
                            till crispy,
                            Eat..
                            Quite good,, & Hubby actually ate a bunch (we have a rule, he will "usually" eat it as long as I dont tell him what it is LOL)

                            I think the only thing I would change next time is to cut into smaller pieces so I get small extra crispy bites.. the bigger bits wernt quite as crispy as they could have been
