  • Looking for chicken wing sauce recipes.... but not with Frank's Hot Sauce

I don't want the boring buffalo style sauce that people make with standard hot sauce and butter. That's boring to me. I want stuff that has amazing flavors. I don't care if is really spicy - like habanero spicy - or mild.... I just want it to taste great. And again, not looking for boring buffalo style sauces.

Here ya go, PP. I primalized Buffalo Wild Wings "Asian Zing" recipe. It's got a lot of carbs, but boy is it addictive-yummy... an occasional treat! I poured about half this recipe over 16 chicken drumettes; dinner and lunch for both hubby and me.

If you didn't want it as sweet, you could use less honey (and less vinegar). This would also be good drizzled over cooked fish (salmon!), or with pork medallions.

    Asian Zing Wings

    4 teaspoons rice wine vinegar
    2/3 cup honey
    3 T chili-garlic sauce (sriracha)
1 T Tamari (or coconut aminos if you're avoiding fermented soy)
    1 t lemon juice
1/4 t grated ginger (or ground ginger)
    1/4 t salt
1/4 t minced garlic (or garlic powder)

In a small saucepan combine ingredients. Heat mixture on low/medium heat, stirring often until sauce reaches a boil and thickens.

Remove from heat, allow it to cool then cover it and chill it until ready to use.

Or, start to cook it in a frying pan and add your chicken, then let it simmer on low heat until the sauce gets thick, turning the chicken occasionally.

    Makes 3/4 cup.

            Peruvian Lime-Garlic Wings

            3 tbsp olive oil
            1/4 cup fresh mint
            2 tbsp coarse salt
            6 medium cloves garlic (chopped)
            1 tbsp pepper
            1 tbsp cumin
1 tbsp sugar (but you can reduce, substitute, or omit this)
            2 tsp paprika
            2 tsp oregano
            2 tsp grated lime zest
            1/4 cup lime juice
            1 medium habanero

Mix it all up in the blender, marinade wings for a couple of hours, then bake. This is enough for a big package of wings.

              Parm garlic wings
Puree a head of garlic into olive oil to make a fine paste. Toss a pound of wings in the paste and lay them out on a baking sheet. Bake at 375* until mostly done. Remove, put in work bowl, and toss in parmesan until well coated (sawdust parmesan works better for this recipe.) Put back in oven until parm is starting to melt and chicken is done.

I use equal parts Louisiana hot sauce (ingredients aged peppers, vinegar, salt) and butter.
Sautée cooked wings (bake or deep fry with no coating) in the sauce/butter mixture for a few minutes.
                Delicious!

I like them with homemade blue cheese dressing.

Now, on a funny note for me, as I smoke so many meats, I finally made smoked chicken wings, and just used regular buffalo sauce.... I smoked them for 90 minutes, then baked them at 450 until crispy, and put sauce over them.... Now THOSE were some darn fine wings. ( They don't get crispy at all in the smoker, cooking at 225 degrees. )

                    Heroin Wings:

                    4 lb chicken wings
                    1/2 cup butter

                    Mix in a bowl:
1/4 cup grated parmesan cheese (you can use 1/3 or 1/2 cup for these three if you want)
                    1/4 cup grated asiago cheese
                    1/4 cup grated romano cheese
                    2 tbsp dried parsley
                    1 tbsp dried oregano
                    2 tsp paprika
                    1 tsp garlic salt
                    1/2 tsp freshly-ground black pepper

Seriously, these bad boys are like crack.

If you have access to an Indian store or aisle in the grocer, they sell garlic paste. Saves a lot of work.... I buy it in quart jars, and they last about 2 months before I run out, LOL.

I made chicken wings on Sunday. No sauce at all. I coated them in olive oil, spenkled with a little kosher salt, course black pepper, garlic powder and hungarian paprika and baked them at 375 for 30 minutes, flip, season and bake. Delish....
